Pairing sweet and vibrant Flor del Café from HueHueTenango, and Square Mile classic Decaf EA Union San Pedro from Oaxaca, Half Caff is as delicious as ever. The husband-and-wife team of Ramon Pablo Chaves and Rosa Ahilón Gerónimo bring us Flor del Café for the fourth year in a row. This year’s lot is particularly delicious, with clean notes of strawberries and caramel. The couple hires pickers during the harvest season, but they do most of the labour themselves and are entirely responsible for the processing on this lot. Union San Pedro has been our partner in the Sierra Sur region of Oaxaca, Mexico, since 2021. We work via Red Beetle Coffee Lab, who construct our lot from individual contributors within the group. Union San Pedro’s commitment to agroforestry is profound. Each community hosts a biofábrica (small organic fertiliser plant) and a nursery that grows seedlings of coffee, cardamom, vanilla, and other plants used for intercropping in the group’s “edible forests.” This method of agriculture improves the quality, too – USP’s coffees are some of the most consistent with which we work, and decaffeinate beautifully.
