A hint of apple accompanies caramel flavours in this Decaf Espresso from Cauca, Colombia. Sourcing partner Cofinet compiles this blend from small-scale farmers in this region. Notes of red apple and toffee define Decaf EA Popayan from Cauca. This lot is a perfect representation of the unique profile of Colombia's Cauca department, nestled between our key sourcing regions of Huila, Narino and Tolima. Popayan is the capital of Cauca, home to the roughly 75 small-scale producers who contribute to this blend via exporter Cofinet. Decades of armed conflict in the region created a lag in the adoption of newer cultivars like Cenicafe and Castillo, retaining slightly more of the Typica variety known for its florality and berry-like sweetness. Cofinet's program in the region incentivises quality with premiums of up to 20% above market price, along with repeat buying and support from agronomists. Additional sweetness from the ethyl acetate decaffeination process gives this decaf espresso a little extra something, along with classic chocolate and brown sugar flavours fit for an all-day espresso. Roaster Notes

"Roughly 75 smallholder producers around Popayan, Cauca, Colombia, assembled by exporter Cofinet. Varieties Colombia, Castillo and Caturra with a higher-than-usual share of Typica retained. Washed process, then ethyl acetate (EA) decaffeination, which adds sweetness. Cofinet's regional programme pays quality premiums of up to 20% above market price plus repeat buying and agronomist support."
