This coffee is produced from a handful of smallholder farms in the southeastern mountains of Brazil. Ibiraci is a region with a higher altitude compared to its surroundings, a flat plateau that produces great quality coffee. Seeking to take advantage of the mild climate and slower cherry maturation, farmers produce coffees known for their acidity and fruit-forward profiles. Modern machinery and high-tech methodologies to cultivate and process the coffee are leading the way for speciality coffee in this region. Ibiraci primarily grows the Catuai and Mundo Novo varieties, with natural processing being the main method.
