This single-origin washed filter comes from the Ayarza cherry mill in Santa Rosa, Guatemala, a region known for its dramatic volcanic landscape and the cold blue waters of the Laguna de Ayarza and Laguna Azul. These lakes, formed by ancient volcanic activity, bring cool breezes and nutrient-rich soil, making the region one of Guatemala's most exciting coffee-growing areas. By buying ripe cherries directly from local farmers and processing them centrally, the team can maintain strict quality control and pay a fair premium for great coffee.
