High up on Huila's southwestern border, 37-year-old father of two Gelver Cuenca Garcia is producing something truly spectacular at Finca La Soledad. With just four hectares in the town of La Plata, this beautiful farm sits at a huge 1,900 meters above sea level. This extreme altitude provides the perfect climate for slow coffee cherry development, yielding exceptional sweetness and complexity. This is especially noticeable when it comes to the highly sought-after Geisha varietal grown here. To bring out the very best of this exceptional coffee, Gelver, his family, and their dedicated picking team meticulously pick only the absolute ripest cherries by hand. The coffee then undergoes a unique semi-washed process. It is washed in the traditional Colombian manner but carefully rinsed to leave just a small amount of the sugary mucilage on the bean. This hybrid processing method beautifully captures the elegant, floral apricot-like notes of this washed Geisha. The final step takes place inside a marquesina, a traditional parabolic greenhouse. Here, Gelver carefully monitors the drying process on movable beds to ensure uniformity. The result of all this precise work is an incredibly refined, elegant filter coffee that stands out as a true crown jewel. Altitude 1,900 metres, giving slow cherry development and high sweetness and complexity. Variety Geisha. Semi-washed process: washed in the traditional Colombian manner but rinsed to leave a small amount of sugary mucilage on the bean. Dried inside a marquesina, a traditional parabolic greenhouse, on movable beds monitored for uniformity. Cherries hand-picked at peak ripeness by Gelver, his family and their picking team. Brew guide: V60/Origami, 60g per litre in 3:00-3:30 mins.
