Located high up in Timaná, in the heart of Huila, an area famous for high-quality coffee in Colombia, Cata Reserva spans 30 hectares. This washed filter delivers exceptional flavour with balance and sweetness and a tea-like profile. The farm was previously owned by Rodrigo Cortés, who worked closely with Colombian exporter Cata. After his retirement, Cata jumped at the chance to get their hands on his incredible plot and continue his legacy. At Cata Reserva, they care deeply about the environment. All coffee goes through a washed process, with no use of chemical fertilisers, allowing them to prioritise soil health, resulting in exceptional coffee quality. Their mission aligns perfectly with ours. They are working hard to Make Coffee Better. By carrying out environmentally responsible management while also developing high-quality cup profiles, they can produce market-leading crops. All the coffee cherries are manually harvested, ensuring only the best fruit is processed. After pulping, the cherries go through 24 hours of controlled oxidation to enhance the complexity and cup clarity. Finally, they are left to dry in the sun on raised beds until an 11% moisture content, preserving the coffee beans' integrity and structure.

"Cata Reserva farm, 30 hectares in Timaná, Huila, Colombia. Previously owned by Rodrigo Cortés and now run by Colombian exporter Cata, continuing his legacy. Variety Castillo, washed process. Cherries manually harvested, pulped, then given 24 hours of controlled oxidation to enhance complexity and cup clarity, then sun-dried on raised beds to 11% moisture. Sustainability: no chemical fertilisers, soil-health-first, environmentally responsible management. Brew guide: V60/Origami, 65g per litre in 3 mins. Name: stripped the trailing range/format label "Filter" from "Cata Reserva Filter" per the naming rule, and recorded the filter recommendation in brew_method instead."
