About

Many will remember just how delicious last year's coffee from Coop Tinamit was. We enjoyed it so much that we bought from them again this year, this time choosing their honey-processed lot. The Tinamit Toliman Agricultural Cooperative is a relatively young co-operative of Kaqchikel coffee growers based in San Lucas Toliman, a beautiful town on the shores of Lake Atitlan, Guatemala. Recognising the region's potential for producing exceptional speciality coffee, the growers began working together in 2016 and formally established the co-operative in 2018. Alongside quality, they are committed to protecting the lake's remarkable natural environment through sustainable farming practices. In recent years, Tinamit has been refining its honey-processing methods, and we were delighted with the results from this harvest. The coffee is hand-picked on farms around San Lucas Toliman and delivered to the co-operative the same day. Each delivery is carefully inspected to ensure only fully ripe cherries are used, with any floaters removed before depulping. After depulping, the coffee is dried on sunlit patios for five to six days before being transferred to shaded raised beds, where it slowly finishes drying to achieve its final quality. Expect a beautiful sunny cup full of pulpy yellow fruits; think yellow plum, peach, apricot and tinned pineapple. Sweet yet balanced with a custardy mouthfeel. Another delicious example of a fine honey-processed coffee.
