Led by Nestor Lasso, the farm focuses on experimental processing, rare varieties and innovative methods to continually raise the bar for quality. This lot is the Ombligon varietal, a popular competition choice and valued for its vibrant sweetness and delicate complexity. This coffee has undergone a carefully controlled experimental process, beginning with controlled oxidation, followed by anaerobic fermentation, and finished with a thermal shock to halt fermentation at just the right point, all designed to highlight its naturally sweet and fruity character.
